Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add pork and onions and cook until brown, about 5-7 minutes, stirring occasionally. Add the garlic, cook additional 30 seconds until fragrant.
  3. Add the rice, seasoning, peas and carrots, and broth. Bring to a boil. Cover and reduce heat to low.
  4. Simmer until rice is tender, about 20 minutes.
  5. Stir in greek yogurt and cheese until combined. Cover and heat until cheese melts, about 2-3 minutes.

Recipe Tips

Use low-fat shredded cheddar cheese.

Top with scallions, avocado slices, or bell peppers.

This stays up to three days in the refrigerator.
