  1. Put the beans in a large pot and add 10 cups of water. Place the pot in the refrigerator and allow the beans to soak overnight.
  2. Drain water. Place beans in a large soup pot and cover with water.
  3. Cook the beans over medium heat at a simmer until they are soft, about 60-90 minutes. Add more water as needed while the beans are cooking.
  4. Add the plantains, tomato, pepper, onion, garlic, and salt.
  5. Continue cooking at low heat until the plantains are soft.
