Breakfast Burrito
Breakfast burritos are a filling and healthy way to start the day! With lean protein, vegetables, and grains it's a balanced meal you can eat with one hand.

Ingredients
- 1 tablespoon vegetable or olive oil
- 1 medium bell pepper, diced
- 1/2 cup diced onion
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 14.5 oz can low sodium black beans, drained and rinsed
- 8 large eggs
- 4 medium whole wheat wraps
- 1 medium tomato, diced
Directions
- Put a large skillet over medium heat. Add oil. When oil is hot add bell pepper and onion. Cook about 5 minutes or until softened and add cumin and chili powder.
- Add in black beans and cook until warm.
- Meanwhile, crack 8 eggs into a bowl, add a splash of water and a pinch of salt and scramble.
- When veggies and beans are done, set them aside in a bowl.
- Using the same skillet, cook the scrambled eggs until set.
- When the eggs are done, put the bean, veggies, and eggs on a wrap. Top with tomatoes and enjoy!
