Ingredients

  1. In a large soup pot, bring water and rice to a boil over high heat. Cover, reduce heat to low and simmer 30 minutes until most of the liquid is absorbed.
  2. Add the yellow onion, garlic, chili powder, cumin, and black beans to the pot. Stir to combine and heat until beans are just warmed, about 2 minutes. Cover and set aside.
  3. In a large skillet, heat oil over medium-high heat. Add carrots and cook 5-8 minutes until soft.
  4. Add red onion and peppers, and cook another 3-5 minutes until they begin to soften.
  5. Add the lime juice and toss to coat. Remove from heat and stir in cilantro.
  6. Build your burrito bowl with the rice and beans, topped with the vegetables and enjoy hot.

Recipe Tips

Top with cilantro, salsa, diced tomatoes, and/or avocado slices.

Use as a burrito filling.  Use whole wheat wraps for extra fiber.
