Baked Kale Frittata

Ingredients
- 2 teaspoons vegetable oil
- 1 cup onion, chopped
- 3 bunches kale, washed and chopped
- 1/4 cup water
- 12 large eggs
- 1/2 cup non fat milk
- 1/4 cup cheddar cheese
- 1/2 teaspoon salt
- cooking spray
Directions
- Preheat oven to 375°F. Coat 9 inch round baking pan with cooking spray.
- Heat oil in large frying pan. Add onion and saute 3-5 minutes.
- Stir in kale and water. Cover and cook 5 minutes and then remove from heat.
- In a separate bowl, combine the eggs, milk, cheese, and salt. Blend in kale mixture.
- Pour mixture into baking pan. Bake 20 minutes.
