Directions

  1. Preheat oven to 400 degrees F.
  2. Place potatoes, carrots and onions in a large roasting pan.
  3. Put chicken pieces on top of the vegetables.
  4. Mix water, thyme and pepper. Pour over chicken and vegetables. Cover with foil.
  5. Bake at 400 degrees for 45 minutes. Spoon juices over chicken once or twice during cooking.
  6. Remove foil and bake an additional 20 minutes until browned and an inserted thermometer is 165 degrees F for 15 seconds.

Recipe Tips

Add 1/2 teaspoon red pepper flakes, chili powder, garlic powder, and/or onion powder to the water for added flavor.
