Directions

  1. Place oil in a skillet and heat. Add onions and peppers and cook until tender.
  2. Add tomato and spinach to the skillet.
  3. Cover and simmer until spinach wilts.
  4. Microwave peanut butter until almost liquid.
  5. Add peanut butter, salt and pepper to skillet and heat until just warm.
