Directions

  1. Preheat the oven to 425°F. Lightly grease a deep pie pan or baking dish.
  2. In a skillet, heat oil over medium. Add scallions and carrots and cook until carrots begein to get soft, about 5 minutes. Add garlic and cook for one minute.
  3. Add 1/3 cup of broth and stir until the liquid is mostly evaporated. Stir in the flour.
  4. Add sage (if using) and continue to stir for about 2 minutes until the flour begins to turn light brown.
  5. Add remaining broth and stir continuously until it simmers and the sauce thickens.
  6. Add turkey, peas, and salt. Add pepper if you'd like. Transfer the mixture to the greased pan.
  7. Spread mashed potatoes evenly over the top. Set onto a cookie sheet and bake until the top is golden, 20-25 minutes.

Recipe Tips

If you don't have scallions, use one medium yellow onion or two medium leeks.
