  1. Trim fat off of boneless beef strip steak. Season steak with 1/2 teaspoon each salt and black pepper.
  2. Heat cast iron skillet over medium-high heat. Add steak and cook to desired doneness, about 3 to 4 minutes per side, if you prefer medium-rare. Transfer steak to a cutting board and let rest.
  3. From 2 limes, squeeze 4 tablespoons lime juice into a large bowl. To bowl, add fish sauce (if using), sugar and water. Stir.
  4. Slice steak into strips.
  5. Add the pear slices, scallions and chile to the bowl of dressing. Toss to combine. Fold in 5 ounces mixed greens and 1 cup cilantro. Serve with the steak and sprinkle with chopped peanuts, if desired.
