Ingredients

Directions

  1. Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat. Meanwhile, combine egg and 1/4 teaspoon soy sauce in a small bowl.
  2. Add egg mixture to skillet and swirl to coat bottom of the pan. Cook about 1 minute without stirring, then scramble and remove from pan when cooked.
  3. Add remaining oil to skillet. Add garlic, ginger, and scallion to skillet. Cook 30 seconds or until fragrant.
  4. Add pork and cook until done, about 5 minutes. Stir occasionally and break up meat.
  5. Add carrots, peas and rice to pork. Stir to combine. Fold in cooked egg.
  6. Add remaining soy sauce and vinegar and cook, stirring constantly, until coated, about 1 minute.
  7. Let cook another 2 minutes until warm. Serve.

Recipe Tips

Use brown rice or white rice.

Add 1/4-1/2 teaspoon red chili flakes to add spice.
