Carrot Spice Muffins

  1. Preheat oven to 350°F. Coat 12 muffin cups with vegetable cooking spray.
  2. In a large bowl, mix eggs, applesauce, oil, sugar, and vanilla until completely combined. Stir in carrots.
  3. In another bowl, whisk together flour, baking soda, cinnamon and salt. Add the flour mixture to the wet mixture and stir until all of the flour is wet.
  4. Portion the mixture evenly into the muffin cups. Bake for 25-30 minutes. You can check if they're done by inserting a toothpick or knife into the middle of one - if it comes out clean (very little crumbs), they're ready.
  5. Allow to cool for 10 minutes, then remove muffins from tin and cool on a wire rack or plate.

Recipe Tips

Swap carrots for shredded zucchini, or try a 50/50 mix of both!

Using applesauce helps reduce the amount of fat while keeping the muffins moist.
